Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 2 eggs room temperature
  • 1/2 cup milk dairy or plant-based
  • 1/4 cup neutral oil or melted butter
  • 1 cup cheddar cheese shredded, optional
  • 1/2 cup berries or herbs optional mix-ins

Equipment

  • Muffin tin
  • Mixing bowls
  • Whisk
  • Spatula
  • Oven

Method

  1. Preheat your oven to 180°C (350°F) and line a muffin tin with paper liners or grease it well.
  2. In a large mixing bowl, whisk together the flour, baking powder, and salt until evenly combined. This creates a light, airy base for your muffins.
  3. In a separate bowl, beat the eggs with the milk and oil or melted butter until smooth and slightly frothy. The mixture should feel warm and look uniform.
  4. Pour the wet ingredients into the dry ingredients, then gently fold with a spatula until just combined. Be careful not to overmix; the batter should be lumpy but moist.
  5. Gently fold in the shredded cheese or berries, if using, distributing evenly without overmixing to keep the muffins tender.
  6. Spoon the batter into the prepared muffin cups, filling each about ¾ full to allow space for rising. Tap the tin lightly on the counter to settle the batter.
  7. Bake in the preheated oven for 20-25 minutes, or until the muffins are golden on top and a toothpick inserted in the center comes out clean. The kitchen will fill with a warm, toasty aroma.
  8. Remove the muffins from the oven and let them rest in the tin for about 5 minutes to set. Then transfer them to a wire rack to cool slightly or serve warm.
  9. Enjoy your freshly baked, customizable breakfast muffins with butter, jam, or your favorite toppings, or store leftovers in an airtight container for up to three days.

Notes

Feel free to experiment with different mix-ins like chopped herbs, cooked vegetables, or fruits. For a vegan version, substitute the eggs with mashed bananas or applesauce and use plant-based cheese or skip cheese altogether.
